2 Chainz just gets me. As a lazy and easily distracted vegetarian, half of my time in the kitchen is usually spent staring blankly at recently-purchased produce, hoping to Yeezus that my brain will generate an idea for what to do with it. The answer finally came to me in the form of? vegetable desserts.
Rather than impatiently scarfing down some veggies before indulging in that sweet finale of a meal, why not incorporate them in? Weird concept, amazing results? I?m talking about something a little more interesting than your standard carrot cake/pumpkin pie. Try these out:
Avocado Chocolate Mousse

If you manage to botch this recipe, I?ll happily build a shrine as a testament to your horrific culinary skills. I swear it.
Directions
1) Take all of the following ingredients and blend ?em. You can use a blender, food processor, potato masher, or if you have a particularly strong DIY ethic, your hands.
- 2 avocados, peeled and pitted
- ? cup honey
- ? ?cup cocoa
- 2 tbsp of melted coconut oil
- ? tsp salt
- 1 tsp vanilla
2) That?s literally it. Devour mercilessly.
Five-Bean Brownies
These have the perfect bean-to-chocolate ratio, and they taste so fucking good because of flavour contributions from five different beans: black, cocoa, vanilla, carob, and coffee. The recipe?s pretty forgiving, and the substitutions work great.
The only weird ingredient is carob syrup, which you can find at most Middle Eastern grocery stores. But if you?d rather not go on a hunt, just leave it out; the brownies will still taste heavenly.
Directions
1) In no particular order (and with gusto), smoosh together the following:
- 2 cups cooked black beans
- ? cup carob syrup
- ? cup agave nectar (or honey)
- ? cup Kahlua liqueur (or brewed coffee if you?re a grinchy type who doesn?t like Kahlua)
- 2 eggs
- 2 tsp vanilla
- 1/3 cup coconut oil (or melted unsalted butter)
2) In a separate bowl, sift together:
- ? cup cocoa (preferably not Dutch cocoa)
- 2 tbsp tapioca starch (or corn starch)
- 1 tsp cinnamon
- ? tsp salt
? then dump them into that first mixture you made.
3) Mix in a ? cup of chopped dark chocolate. No stress, it doesn?t need to be minced, we?re not adding garlic here. Use dark chocolate chips if you want.
4) Pour into a coconut oil-greased pan, then bake at 350? for 20 mins. Let it cool, then cut into squares.
5) Force-feed them to your skeptical friends, and watch their faces light up in disbelief and joy.
